Process and equipment approach

Rum production starts from the specified sugarcane-derived feed, with preparation and fermentation followed by distillation. The selected distillation arrangement and subsequent maturation or finishing depend on the intended product. Feedstock, spirit quality and scope must be defined together.

Applications and product requirements

Rum production starts from an agreed sugarcane-derived feed, such as molasses or juice, followed by fermentation and distillation. The customer’s spirit specification and market requirements determine the process boundaries. A distillation package and a complete rum-distillery project are different enquiries.

Equipment and operating approach

A wider project may include feed preparation, fermentation, wash handling and the stillhouse. Pot-still and column arrangements have different operating and separation characteristics. Fraction handling and any further distillation are selected with the product strategy; equipment alone does not establish flavour, maturation quality or the right to use a protected product name.

Materials and configuration

ATTOMO’s scope can be defined for stills or columns, copper or stainless-steel contact sections, condensers, receivers and control interfaces. Heating method, cleanability, foaming allowance and alcohol-transfer arrangements should be reviewed. Fermentation, maturation, blending, packaging and utility generation must be expressly included or excluded.

Utilities and operation

State wash composition and alcohol strength, batch or continuous schedule, output basis and cooling conditions. Steam, process water, power, cleaning and residue-handling requirements follow the selected process. Product cuts, alcohol recovery and final strength need separate acceptance definitions.

Frequently asked questions

Is the same process suitable for every rum style?

No. Feed preparation, fermentation, distillation and finishing requirements vary. The desired product should guide the design.

Does plant supply guarantee a finished spirit’s flavour?

Product character also depends on feedstock, fermentation, operation and maturation. Quality targets and acceptance responsibilities must be agreed.

Is a pot still always preferable for rum?

No. The target product, operating method, feed and capacity determine the choice. Pot and column systems should be compared against the same product brief.

Can the package accept juice-based as well as molasses-based wash?

Only within a defined feed specification. Solids, foaming and volatile composition can differ and must be considered in the equipment design.

What is needed to quote only the distillation section?

Provide wash flow or batch volume, alcohol strength, feed analysis, intended distillate, heating and cooling conditions, and the boundary for receivers and storage.
